Another wonderful cross between a Metheglin and Capsumel.
3 lbs Wildflower Honey
88 oz Spring Water
7 tsp Lapsang Souchong loose leaf tea
50 pieces raisins
1 packet Lalvin D47
1/2 tsp Fermaid O
Secondary
1 Chiplolte Pepper, dry
1 Ancho Chile Pepper, dry
1/2 tsp Paprika
1/2 Madagascar Vanilla Bean, Split- 2-4 weeks
Remove peppers when desired heat is achieved ( 3-5 days)
Age on 2 1/2 inch spiral Medium Toast American Oak, 4-8 weeks minimum.
