Forest Fire Reserve

A smokey naked mead with hints of juniper berries and rosemary.

  • 3 lbs Orange Blossom Honey

  • 96 oz Spring Water

  • 2 tsp Lapsang Souchong loose lea tea

  • 4-6 Juniper Berries ( lightly crushed)

  • 1 small Rosemary Sprig (1 inch)

  • 1/2 packet Lalvin D47

  • 1/4 tsp Go - Ferm


    • Steep tea in 2 cups of water for 5-7 minutes.

    • Use only 1 cup in primary, save the rest for adjustments at the end.

    • Days 5-7 or once fermentation is active but slowing, add crushed juniper berries and rosemary in a rumble jar (for easy removal) tast daily at day 3, remove when desired flavor is achieved but no more than 5 days.


After fermentation is complete taste for smoke adjustment, add reserved tea 2-4 oz at a time until desired taste is achieved.


Age on 1/2 oz Medium Toast American Oak for up to 4 weeks.
