Yeast for Mead Making: Choosing the Right Yeast

Yeast is one of the most important ingredients in mead making. Honey provides the fermentable sugars, but yeast is what transforms those sugars into alcohol and creates many of the aromas and flavors found in the finished mead.
There are many different yeast strains available to the mead maker, and each can produce a different result. Some yeasts are relatively clean and allow the honey to take center stage. Others produce fruity, floral, spicy, or earthy characteristics that become an important part of the finished mead.
Yeast selection can also affect fermentation speed, alcohol tolerance, mouthfeel, aroma, and how a mead develops during aging.
There is no single "best" yeast for every mead. The right choice depends on the recipe, the desired alcohol level, the ingredients being used, and the characteristics you want in the finished mead.
The following are some of the yeast strains I commonly consider when making mead.
Lalvin 71B-1122
Type: Wine Yeast
Typical Alcohol Tolerance: Approximately 14%
Characteristics:
71B-1122 is one of the most popular wine yeasts among mead makers. It is particularly well suited to fruit-based meads and is known for producing fruity characteristics while helping create a softer finished mead.
It is also known for its ability to metabolize a portion of malic acid, which can be useful when working with certain fruits.

EC-1118 is frequently selected when a strong, clean fermentation and high alcohol tolerance are priorities.
None is universally better than the others. They simply offer different tools for the mead maker.
Red Star Premier Blanc

Characteristics:
Premier Blanc is a versatile wine yeast that can be used in a variety of mead recipes. It is generally considered a reliable fermenter with a relatively clean profile.

Belgian Ale Yeasts

Saison Yeasts

High-Alcohol Yeasts

High-gravity meads place considerable stress on yeast. High sugar levels at the beginning of fermentation and increasing alcohol levels as fermentation progresses can make fermentation more difficult.
High-alcohol wine yeasts can provide additional tolerance and fermentation capability.

Yeast Nutrients Are Important
Selecting the right yeast is only part of producing a successful mead.
Honey is rich in sugar but is relatively poor in many of the nutrients yeast requires for healthy reproduction and fermentation. For this reason, mead generally benefits from proper yeast nutrition.
Providing appropriate nutrients can help:
Promote healthy yeast growth
Reduce fermentation problems
Reduce the risk of sluggish or stalled fermentation
Help produce a cleaner fermentation
Improve fermentation consistency
Different nutrient schedules and methods are available, including staggered nutrient additions. The approach should be matched to the recipe and fermentation conditions.
Fermentation Temperature Matters
Every yeast strain has a preferred temperature range.
Fermenting too cold can slow or stop fermentation. Fermenting too warm can increase the production of unwanted fermentation byproducts with some yeast strains.
For that reason, the temperature recommendations supplied by the yeast manufacturer should be considered when planning a fermentation.
Temperature is particularly important with expressive wine and ale yeasts because fermentation temperature can influence how strongly their characteristic aromas and flavors are expressed.
Alcohol Tolerance Is Not a Target
One common mistake is assuming that if a yeast has an alcohol tolerance of 18%, it will automatically ferment a mead to 18%.
Alcohol tolerance is better thought of as a general indication of what the yeast may be capable of under appropriate conditions.
Actual fermentation performance depends on many factors, including:
Starting gravity
Yeast health
Nutrient availability
Fermentation temperature
pH
Oxygen management
Osmotic stress
Alcohol accumulation
Fermentation management
A yeast's published alcohol tolerance should therefore be treated as a guideline rather than a guaranteed finishing point.
Dry, Semi-Sweet, and Sweet Mead
Yeast selection can influence the final character of a mead, but the yeast strain alone does not determine whether a mead will finish dry or sweet.
A mead's final sweetness depends on several factors, including the starting gravity, yeast characteristics, fermentation conditions, residual sugar, and how the finished mead is handled.
A high-alcohol-tolerance yeast may ferment a large amount of the available sugar, but that does not automatically mean every high-tolerance yeast will produce a completely dry mead.
Likewise, selecting a lower-tolerance yeast does not guarantee a sweet mead.

Experimenting With Yeast
One of the most interesting things about mead making is that you can make the same recipe with different yeast strains and end up with noticeably different meads.
Try making small batches using the same honey, water, fruit, and other ingredients while changing only the yeast.
You may find that one yeast emphasizes the fruit, another emphasizes the honey, and another produces a completely different aroma and mouthfeel.
This is one of the easiest ways to learn what different yeasts actually contribute to mead.
My Approach to Yeast Selection
When selecting yeast, I start with the ingredients and the type of mead I am trying to make.
If I am making a delicate traditional mead, I may want a relatively clean yeast so that the honey remains the focus.
For a fruit mead, I may choose a yeast that complements the fruit and adds additional fruity characteristics.
For a high-alcohol mead, I will look for a yeast with appropriate alcohol tolerance and strong fermentation performance.
And when I am experimenting, I may choose a yeast specifically because of the characteristics it can contribute.
There are no hard-and-fast rules that say a particular yeast can only be used for a particular style of mead. Yeast selection is another tool available to the mead maker.
The more yeast strains you try, the better you will understand how much influence yeast can have on the finished mead.
A Note on Yeast Specifications
Alcohol tolerances and recommended fermentation temperatures can vary somewhat between manufacturers, individual products, and fermentation conditions. Always check the current manufacturer's specifications for the particular yeast you are using before starting a batch.
