• 3lbs Orange Blossom Honey

• 96 oz Spring Water

• Zest from 1 Lemon

• Zest from 1 Lime

• 1/2 packet Lalvin D47

• 1/4 tsp Go Ferm

• 1/2 tsp Fermaid O

Day 3 add;

• 5 Fresh Mint Leaves, lightly bruised, remove at 48 hours

• 1 piece thinly sliced Ginger

• 2 White Peppercorns

Day 14 add;

• Juice from 1/2 of Lemon

Back sweeten to taste with Orange Blossom Honey

Pasteurize ( I use the Anova method) for 22 minutes at 140 degrees Fahrenheit .
