• 2 1/4 lbs Dark Wildflower Honey

• 3/4 lbs Buckwheat Honey

• 96 oz Spring Water

• 1/2 packet Lalvin QA23

• 1/4 tsp Go Ferm

• 1/2 tsp Fermaid O

Secondary

• 3 Irish whiskey soaked Medium Plus French oak cubes - 30 days

  • Prior to adding cubes, soak in Irish whiskey for 30 days. Save the whiskey do not discard.

Bulk age 60-90 Days.

Taste, if more whiskey flavor profile is desired use the saved whiskey adding 1/4 tsp at a time until desired profile has been reached.
