• 2 1/2 lbs Wildflower Honey

• 3/4 Buckwheat Honey

• 92 oz Spring Water

• 1 1/2 tbsp Lapsang Souchong loose leaf tea (cold steep in rumble jar for 12-18 hours)

• 1/4 tsp Cracked Black Pepper

• Pinch of Sea Salt

• 1/2 packet Lalvin D47

• 1/4 tsp Go Ferm

• 1/2 tsp Fermaid O

Secondary

• 1/4 tsp Roasted Barley (briefly steeped)

• 3/4 oz Heavy Toast American Oak , 3-5 weeks

Bulk Age Minimum 3 months, best at 4-6 months.

This is meant to be a Dry/flinty mead.

Pasteurize ( I use the Anova Method) for 22 minutes at 140 degrees Fahrenheit .
