A smoked floral mead with peach, vanilla bean, black teas, meadowfoam honey .

• 2 1/2 lbs Wildflower Honey

• 100 oz Spring Water

• 11 tsp Lapsang Souchong loose leaf tea

• 5tsp Assam loose leaf tea

• 1 Madagascar Vanilla bean, split

  • Place tea and vanilla bean in rumble jar for easy removal.

• 1/2 packet Lalvin 71B

• 1/4 tsp Go Ferm

• 1/2 tsp Fermaid O

Back sweeten with Meadowfoam Honey (Tupelo honey is a good alternative) to taste.

• 3/4 tsp Olive Nation Peach Extract

• 1/2 tsp Vanilla Extract

Pasteurize ( I use the Anova method) for 22 minutes at 140 degrees Fahrenheit .

Age 1-3 months, Ideal at 6 months .
