Part of the Emperor Series. A delightful green tea mead.

• 2 1/2 lbs Orange Blossom Honey

• 100 oz Spring Water

• 25 g Lu'An Guapian loose leaf green tea*

  • Steep tea at 175 degrees Fahrenheit for 4 minutes. Remove leaves immediately. Let cool completely before adding to must. (use a portion of 96 oz water)

• 1/2 packet Lalvin 71B

• 1/4 tsp Go Ferm

• 1/2 tsp Fermaid O

Secondary

• 1/2 lb Asian Pear, sliced and previously frozen.

Back sweeten with Orange Blossom Honey to taste if desired.

Pasteurize ( I use the Anova method) for 22 minutes at 140 degrees Fahrenheit .
